This amazing pumpkin recipe is like a pumpkin pie without the crust. It's a rich and creamy pudding, perfectly spiced and baked to perfection. Pumpkin puree (not pumpkin pie filling) is combined with brown sugar, warm spices, vanilla extract, eggs, and half-and-half until smooth and then baked in a water bath until set. Recipe Variation
- The pudding may also be baked in individual baking dishes or ramekins. Place the ramekins in a larger pan and fill it with boiling water to a depth of about 1 inch. Bake for 40 to 45 minutes, or until a knife inserted into the center comes out clean.
- If you prefer your pumpkin pudding chilled, place it in the refrigerator for a few hours before serving.
Is canned pumpkin made of pumpkin?
Although the label reads "pumpkin," not every brand of canned pumpkin puree is made of pumpkin. Many, including Libby's and One-Pie, use a type of squash that is closer to butternut squash. Because pumpkin is a type of squash, the manufacturers can legally promote the product as pumpkin.
