Our Best 3-Ingredient Desserts for Fall

Fall isn't the most relaxing of times, is it? The kids are back in school, you're back at work, and none of you have a summer vacation to daydream about. And then there are those presidential debates—will this election ever stop?

That's why I reach for a warming fall dessert to take the edge off.

What's that? You've got "no time to make dessert"? You're "too busy packing school lunches and freaking out about the coming apocalypse"? Relax. Epi's sweet 3-ingredient recipes will you have you eating your feelings in no time.

Start with these crispy, cinnamon-y treats, which are easy (too easy, really) to reach for whenever you're drinking a warm cup of coffee or tea—be it first thing in the morning or last thing at night.

A skinny treat and a cup of coffee won't do it for you? Fine, go forth and eat your coffee in the form of this ice cream pie.

Now, some of you probably balked at that last suggestion. Ice cream pie? It's too cold! If that's your feeling, focus on this easy-to-assemble icebox cake. In it, warmly-spiced gingersnap cookies are layered with freshly-whipped cream and marmalade, then set to chill for 8 hours until the whole thing melds into a sliceable dessert.

And if you're really feeling autumnal and fancy, look towards this galette. It's practically the easiest baked dessert there is—it just doesn't look like it. For this version, a store bought pie crust (you can also make your own) is piled high with pears that have been tossed in sweet, rich caramel sauce (we have a 3-ingredient, microwavable recipe for that too, FYI) and then baked. That's it.

Finally, there's this mousse made from canned pumpkin (actually—shhhh—it's canned squash). Stir the "pumpkin" into caramelized sweetened-condensed milk, then cool it and fold in some whipped cream. If you have any of those cinnamon-sugar twists in the house, eat them together. Use the twist as a spoon even. Hey, the apocalypse is coming—all bets are off.
