These vegan chocolate spice cookies are similar to a molasses or a gingerbread cookie but with just a hint of cocoa for a chocolate flavor. Infused with spices we attribute to the holiday season, including ginger, cinnamon, cloves, and nutmeg, these vegan cookies are great for Christmas. But if you are a fan of molasses cookies, then you will want to bake these delicious cookies throughout the year.

These chocolate spice cookies come out chewy on the inside, crunchy on the outside for a delectable and tummy-satisfying treat. Just know that the dough needs to chill for an hour before baking. Then enjoy the delicious smell wafting through your home while these cookies are baking in the oven. Make up a double batch so you can share with your friends and family, or freeze for later.

These vegan cookies are a perfect snack in the afternoon or goodie in the evening after dinner.

Ingredients

  • 1 1/2 cups plus 1 tablespoon all-purpose flour

  • 1 1/4 teaspoons ground ginger

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon nutmeg

  • 1 tablespoon cocoa powder

  • 1/2 cup vegan margarine

  • 1/2 cup brown sugar

  • 1/4 cup molasses

  • 1 teaspoon baking soda, dissolved in 1 1/2 teaspoons boiling water

  • 1/4 cup sugar

Steps to Make It

  1. Gather the ingredients.

  2. Whisk together the flour, ginger, cinnamon, cloves, nutmeg, and cocoa in a small bowl and set aside.

  3. Beat together the margarine and brown sugar. Add the molasses and mix well. Add half of the flour mixture and the baking soda mixture and combine well. Add the rest of the flour mixture.

  4. Chill, covered for at least 1 hour. Preheat the oven to 325 F.

  5. Spoon dough into 1 1/2-inch balls, then roll each ball in the sugar and place on a cookie sheet.

  6. Bake 13 to 15 minutes until surfaces start to crack slightly.

How to Store and Freeze

  • Store your cookies in an airtight container on the counter, where they will stay good for up to two weeks.  
  • Before freezing these vegan cookies, make sure the cookies are cooled down. For an easy grab and go, the cookies can be wrapped individually in plastic wrap and placed in a freezer-safe, airtight container or plastic bag. Or place the cookies in an airtight container in single layers, divided by waxed paper. They can be frozen for up to three months.
