The Spruce / Andrea Livingston
Easy homemade apple pancakes made the traditional way with milk, butter, eggs, flour, just a little bit of sugar, and some grated apples mixed in. A great way to sneak a bit of fruit into your kids' breakfasts, and a great way to use up leftover apples that you have on hand. For an extra apple-y breakfast, serve them topped with applesauce.
Though the recipe calls for nutmeg, you could use cinnamon or even a touch of ginger, if you prefer.

1 1/2 cups all-purpose flour

3 teaspoons baking powder

1/2 teaspoon salt

3 tablespoons sugar

1/4 teaspoon nutmeg

1/3 teaspoon baking soda

1 large egg

3 tablespoons unsalted butter, melted

In a large bowl, combine the flour, baking powder, salt, sugar, and nutmeg.

In a separate small bowl, beat together the baking soda, egg, butter, vanilla, and milk.

Add the milk and egg mixture into the dry ingredients, stirring only until blended, then gently fold in the grated apple.

Spoon batter onto a preheated and lightly greased griddle or frying pan, cooking for 2 to 3 minutes on each side until golden brown.
